This soup is the best homemade soup I have ever tasted, and my husband even went so far as to say it is the best soup he has ever had! That said, we both gave it a 10 out of 10. It will cost you about five dollars for all of the ingredients and will feed a family of 4 with leftovers. Delicious and cheap, does it get any better??
Ingredients:
5 stalks of celery, chopped
2 large potatoes, peeled and chopped into 1 inch chunks
2 1/2 cups chicken broth
2 small yellow onions, chopped
3 cloves of garlic
1/4 cup butter
1/4 cup flour
1/4 tsp rosemary (crushed)
1/2 tsp thyme
salt and pepper
1 1/2 cups milk
5 stalks of celery, chopped
2 large potatoes, peeled and chopped into 1 inch chunks
2 1/2 cups chicken broth

Directions:
1. Put the potatoes and broth into a soup pot and turn to medium until potatoes are soft
2. While the potatoes are cooking, saute the onions, celery and garlic in the butter until soft
3. Add the flour and stir to thicken
4. Add the onion mixture to the potato soup
5. Add the thyme, rosemary, salt and pepper
6. Slowly add the milk
7. Bring to a boil and then simmer
8. Mash soup slightly with a potato masher
Garnish with celery leaves and enjoy!
